Gardenia jasminoides Ellis – The Natural Colour
Gardenia is a plant of the Rubiaceae family native to China. Gardenia fruits and other parts of the plant have been a part of the folklore of East Asian cultures for centuries. The flowers are often used as ornamental plants and for decorative purposes. The pulp of the gardenia fruit contains three major groups of water soluble pigments: crocins, iridoids and flavonoids and in the color industry they are used to impart yellow and blue shades. Gardenia pigments are used and approved as an edible food colorant in countries of East Asia. Gardenia colors has great light and thermal stability at all pH range.
Specification of Gardenia Colour
Stability: when pH values 2.5 ~ 8, tonality varies only + 5%, showing good stability; when pH values more than 6, red color is slightly lighter. The color does not fade at 100℃.It shows good light resistance when the pH values 4～6, and slight change when the pH values 2.5 and 8.It’s easy to produce precipitation when PH values less than 3.5. It’s stable against Al2+, Ca2+, but unstable against Fe2+, Sn2+ (especially in aqueous solution whose pH is at around 4.6), thus, attention should be paid. Adding cysteine hydrochloride can enhance the chrominance. Salt has no effect on color value and tonality.
General use: As colouring agent for general food, such as noodle, stuffings, cold snacks, red bean & rice, beverages, sweet wine etc.
Features: It is soluble in water, and easily soluble in propylene glycol aqueous solution (under 50%) with bright purplish-red in color, but it is Insoluble in absolute ethyl alcohol and oil. It’s a natural coloring agent extracted by modern biological technology from gardenia fruit- carlemanniaceae plants.

Stability: Gardenia green pigment, is the mixture of yellow pigment (gardenia yellow) extracted from gardenia fruit, and blue pigment (gardenia blue) generated by enzyme treatment. Dark green to green powder, soluble in water, hydrous ethanol, and aqueous propylene glycol, almost odorless, with weak hygroscopicity; PH value of 1% aqueous solution=4.5 + 0.5, and not affected by aluminum ion and calcium ion, but the color may be deepened by iron ion and tin ion.
General use: As coloring agent or complementary color in mixing wine, soft drinks, fruit juice (flavored) drinks, jams, candies, cakes, jellies, puffed food, pastry, ice cream, etc
Feature: Gardenia green pigment is a kind of natural edible pigment extracted from the Rubiaceae plant-gardenia fruit. The main composition is carotene crocin and crocetin. This product is of pale green to dark green powder, a blend of gardenia blue and gardenia yellow; it’s easily soluble in water and ethanol water, but insoluble in organic solvents. Its tonality and stability are hardly influenced by the change of PH value.

General use: It is used in coloring for cakes, pastries, candy, wine, fruit juices, beverages, and also in pharmaceutical, cosmetics and other industries.
Feature: Gardenia Yellow is of bright golden yellow in aqueous solution, with strong tinting strength, and the main compositions- crocetin and crocin-are water soluble natural carotenoids. Gardenia yellow, with strong acid and alkali resistance, good heat and light resistance and the optimum pH 3-10, has a wide application range, and good heat and light resistance. In addition to iron ions, it is stable against metal ions.
Stability: It’s a kind of blue powder, almost odorless and tasteless; easily soluble in water, hydrous ethanol and aqueous propylene glycol; bright-blue in color. There is no change in tonality when PH values 3 ~ 8; heat-resistant and the color does not fade at 120 ℃ for 60min. It has weak hygroscopicity and light resistance,but strong dyeing power against protein, with absorbance (1000 times diluted aqueous solution, 590nm) of 0.5.
General use: Mainly used as a food coloring in confectioneries, beverages, jams, etc., and can be used together with other natural pigments. Besides, it may be added to cosmetics due to its safety.
